Musings on a Pancake and a Taco


I wanted to write something deep today, but all that was coming out was perhaps more controversial than I want to get into tonight.

Here is something light and fluffy instead:

In fact, if you visit that blog, the author has an entire post dedicated to pancakes.  How awesome is that?

This has been an interesting weekend in terms of food.  I haven’t done much in the food department recently, being by myself again.  I eat more vegetables, and I buy a lot less groceries, but I don’t go too far out of my way to cook.  My fallback has been baked potatoes (or sweet potatoes) and salad with green leaf lettuce and iceburg, tomatoes, red and green peppers, and mushrooms.  Oh, and spaghetti, with or without extra veggies.

Last night, though, I really indulged myself with something I haven’t made in a long time.  I went out, bought ground beef, and made tacos.  Southern Honey doesn’t like Mexican food, so I don’t have it often.  But, a pound of ground beef, taco mix, shredded lettuce, shredded cheese, sour cream, and salsa later, I had dinner for last night and three servings of leftovers for lunch or dinner this week.  And it was decidedly tasty.

One of these days I’m going to devise my own taco mix.  I’d prefer to use my own spices to a store-bought mix so that I could always have some on hand.  Although I may have been watching too much Food Network lately…

Tonight I think instead of tacos I’ll do some spaghetti and salad because I’m feeling lazy.  It will also give me an opportunity to slice up some lettuce for lunch tomorrow.  Yes, that sounds yummy.

I’m not much of a cook.  There are some dishes I can do — I make a mean sweet and sour chicken/shrimp/pork and some snazzy roasted veggies — but I don’t have a great deal of variety.  It’s something I’m going to have to work on, finding food for me and for Southern Honey.  I love the feeling of emerging from the kitchen with something that makes him say, “Hey, this is great!”

So, in an effort to expand my palate and my culinary know-how, I’m going on a Food Network-watching binge!

What?  You don’t think that will help?

*laughs*  Okay, fine, so I should be trying to cook instead.  I guess I’ll get on that after the move is done.  I have a brand new set of pots and pans waiting for me when I get into the new house that I cannot wait to break in.

Speaking of breaking in, I can’t wait to break in the new house overall: garage, storage building, kitchen with island (!), lovely bathroom, enormous living room.  There are really no words for how much I’m looking forward to it.

Fourteen days to the move and counting!

    Now I am craving pancakes. Badly. And you’ve just given me an idea on what to do with the ground beef I have left after making bolognese sauce Saturday night. Mmm, taco night!

    I do believe a Food Network binge will help! Ok, maybe it’s never helped me(every time I watch cooking shows I always decide I want to cook every thing they make on them but then I see or think of the amount of dirty dishes and the mess I would make in the kitchen and abandon that idea- of course, there’s also the thing about me not being a good cook, but we’re going to skip over that) but I have faith that someday, they will turn me into a cooking goddess.

    Until then, I’ll just stick to take-away.

      Mmmm, bolognese sauce… That sounds tasty. I’ve still got half a pound of ground beef I’ve got to eat by next Saturday. Not to mention pork chops and chicken… Moving stinks.

      That’s almost exactly my problem with watching the shows. I hate thinking about the cleanup! Until I get up the gumption to start trying, though, I’m going to stick to learning by osmosis. 😀

    Wait, wait, wait. The Honey doesn’t like Mexican food? Did you know this before you got married? Not liking Mexican food may very well be grounds for divorce.

    (And by Mexican food, I really mean Tex-Mex, because authentic Mexican food is only “meh”)

      Nope, he really doesn’t. It’s a crying shame, too. But he never did try to hide it — there’s this awesome Mexican restaurant in my hometown that I love to go to, so he had to admit to not liking it so I wouldn’t drag him in there too often. Finding out after the wedding? Yeah, I’d probably be able to get an annulment! 😀

      (And by Mexican food, I mean Mexican food. None of that Tex-Mex nonsense! 😀 How can you be from Houston and not like Mexican food?)
